Stromboli Enchiladas


Stromboli Enchiladas

This 'Original' recipe stemmed from the desire make Strombolis, but not having the time to make dough from scratch. Not only is this a delicious recipe that takes less time in the kitchen, but it is less fattening as well.

Ingredients:

  • Mozzarella Cheese (other cheeses can be substituted or mixed in)
  • Pizza Sauce (your personal favorite will do)
  • Pizza Toppings (make it your own ... pepperoni, sausage, mushrooms, all veggie .... whatever YOU like on pizza)
  • Large Flour Tortillas (again, this can be personalized, many different types of tortillas are available)

Here's how I made mine -


Preheat oven to 350 degrees.


Shred cheese (pre-shredded is fine and faster, but melts

differently) and put aside.


Use a baking dish (metal or glass is fine) that is large enough

for the tortillas (check the package for size),

take a couple of spoonfuls of the pizza sauce and spread it to

cover the entire bottom of the dish. This will help prevent

sticking.


Place one tortilla onto a plate or clean surface. Directly down

the middle of the tortilla, spread a tablespoon or two of pizza

sauce (or three if you like lots of sauce). Next you will be

adding your cheese and toppings. Note, you will need to save some

cheese and toppings for the final step. Simply put some cheese

along the line of sauce and then do the same with the toppings.

There should be enough cheese and toppings that you can fold one

side of the tortilla and cover the mixture. One at a time, fold

each side over the cheese/toppings, and then carefully place

fold-side down into the baking dish.


Continue this process, one tortilla at a time, until the baking

dish is full. These 'Enchiladas' may touch in the dish. If they

do not touch, you won't fit many into the pan.


When the pan is full, spoon pizza sauce over the tops of the

Enchiladas, just like your making a pizza. Top the sauce with

cheese and any toppings of your choosing. For example, the

insides of my Stromboli Enchiladas might have three different

kinds of meat, mushrooms and hot peppers, but I might only put

pepperoni on top of the cheese.


Place dish into the oven and bake for at least 20 minutes ... or

until the cheese looks the way you like it best.


When finished, remove from oven and allow to stand for three

minutes or so.


You may need to use TWO spatulas to remove the Enchiladas from

the dish, or they might fall apart ... be careful! Place onto

plate and ENJOY!!!


Finally, I urge you to use your imagination! There are many

different kinds of tortillas out there, some more lowfat than

others.

Try mixing some shredded Provolone, Parmesan, or Cheddar with the

Mozzarella.

And there are not ANY toppings which are inappropriate!!!

Make it your own!!!
